  • 1 teaspoon garlic powder or use 2 cloves of fresh garlic, minced.
  • 1 teaspoon salt feel free to reduce if using salty sauces.
For the Pineapple Salsa
  • 1 cup pineapple diced; fresh or canned works if drained well.
  • 1/2 red onion red onion finely chopped; can substitute with green onions.
  • 1 jalapeño jalapeño seeded and diced; leave seeds for more heat.
  • 1/4 cup fresh cilantro chopped; skip if not a fan.
  • 1 juice of lime adds acidity and balances sweetness.
For Serving
  • 8 small corn tortillas or flour tortillas if preferred.
  • 1 cup shredded cheese optional; Mexican blend or queso fresco.
  • Sour cream or Greek yogurt optional; use dairy-free alternatives if needed.

Method
 

Marinate the Chicken
  1. In a bowl, combine diced chicken with chipotle sauce, pineapple juice, and a sprinkle of salt. Let it marinate for at least 30 minutes to absorb those vibrant flavors.
Sauté the Chicken
  1. Heat a skillet over medium-high heat and add the marinated chicken. Cook for 7-10 minutes, stirring occasionally, until the chicken is cooked through and starts to caramelize.
Warm the Tortillas
