Ingredients
  

Pasta
  • 8 oz Elbow macaroni or your favorite pasta shape
Meat
  • 1 lb Ground beef or turkey choose lean meat for a healthier option
Vegetables
  • 1 medium Onion finely chopped
  • 2 cloves Garlic fresh minced
Canned Goods
  • 14.5 oz Canned diced tomatoes with green chilies
Spices
  • 2 tbsp Chili powder adjust according to taste
  • to taste Salt
  • to taste Pepper
Dairy
  • 2 cups Cheddar cheese shredded
  • 1 cup Milk whole or plant-based
Garnish
  • to taste Green onions or cilantro optional, for topping

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente; drain and set aside.
Sauté the Veggies
  1. In a large skillet over medium heat, add olive oil. Sauté chopped onions until translucent and fragrant, then toss in minced garlic until fragrant.
Add the Meat and Spices
  1. Stir in ground beef or turkey; cook until browned. Add chili powder, salt, pepper, and canned tomatoes while mixing well.
Combine Everything Together
  1. Reduce heat and stir in cooked pasta along with milk and half of the shredded cheese until everything is well incorporated.
Top with Cheese and Bake
  1. Preheat oven to 350°F (175°C). Transfer mixture to an oven-safe dish, sprinkle remaining cheese on top, then bake until bubbly.
