- 15.5 oz canned crushed tomatoes
- 6 cups vegetable broth
- 2 tbsp balsamic vinegar
Instructions
- Soak the dried beans overnight or for at least a few hours to reduce cooking time.
- Drain and boil the soaked beans in fresh water for 20 minutes, then let sit for another half hour.
- In a large pot, sauté the diced onion in olive oil over low heat until translucent.
- Add the drained beans, crushed tomatoes, vegetable broth, cumin, smoked paprika, garlic powder, and stir well.
- Bring to a boil, then reduce heat and simmer for about 45 minutes if soaked or 90 minutes if unsoaked.
- Stir in balsamic vinegar about ten minutes before serving.
