- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 2 cups short-grain rice
- 1 medium avocado, sliced
- 4 sheets nori seaweed
- 1 small carrot, sliced into thin strips
- 1 cucumber, sliced into thin strips
Instructions
- Press and slice the tofu; marinate in soy sauce, mirin, and sugar for 10 minutes.
- Rinse rice until water runs clear; cook with 2.5 cups of water until tender.
- Lay nori shiny side down; add half a cup of cooked rice in the center.
- Top with marinated tofu, avocado, carrot, and cucumber. Fold nori over to form a pocket.
