Ingredients

  • 1/2 lb ground pork
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp sesame paste (or tahini)
  • 2 tbsp miso paste
  • 1 tbsp soy sauce
  • 3 cups chicken or vegetable stock
  • 12 tbsp chili oil or chili paste
  • 2 portions ramen noodles
  • 2 soft-boiled eggs
  • 2 tbsp scallions, chopped
  • 1 sheet nori, sliced
  • 1 tsp toasted sesame seeds

Instructions

  1. Heat sesame oil in a medium pot over medium heat. Add minced garlic and ginger; sauté until fragrant.
  2. Add ground pork and cook until browned. Season with soy sauce, then set aside.
  3. In the same pot, stir in sesame and miso pastes until combined.
  4. Gradually whisk in stock; simmer for about 5 minutes.
  5. Add chili oil to taste and simmer for another 5 minutes.
  6. Cook ramen noodles according to package instructions; drain briefly under cold water.
  7. Assemble bowls with noodles, hot broth, ground pork, soft-boiled eggs, scallions, nori, and sesame seeds.
