- 1 ½ tsp active dry yeast
- ¾ cup pumpkin purée
- ¼ cup honey
- 2 eggs (divided)
- 3 ½ cups all-purpose flour

- 3 tbsp brown sugar
- ½ tsp kosher salt
- ½ tsp cinnamon
- ½ tsp ginger

Instructions
- 1. Activate the yeast by heating water to 105°F–115°F. Stir in sugar and yeast; let sit until bubbly.
- 2. In a stand mixer bowl, combine pumpkin purée, honey, melted butter, one egg, and the yeast mixture. Mix in flour and salt.
- 3. Knead the dough until smooth and stretchy. Let rise in a greased bowl until doubled in size (about 1 to 1½ hours).
- 4. Shape into rolls and place them in a prepared baking dish; let rise again for about 30 minutes.
- 5. Preheat oven to 375°F; brush rolls with beaten egg and bake for 25–30 minutes until golden brown.
