  • ¾ cup pumpkin purée
  • ¼ cup honey
  • 2 eggs (divided)
  • 3 ½ cups all-purpose flour

  • 3 tbsp brown sugar
  • ½ tsp kosher salt
  • ½ tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp allspice
  • ¼ tsp nutmeg

Instructions

  1. 1. Activate the yeast by heating water to 105°F–115°F. Stir in sugar and yeast; let sit until bubbly.
  2. 2. In a stand mixer bowl, combine pumpkin purée, honey, melted butter, one egg, and the yeast mixture. Mix in flour and salt.
  3. 3. Knead the dough until smooth and stretchy. Let rise in a greased bowl until doubled in size (about 1 to 1½ hours).
  4. 4. Shape into rolls and place them in a prepared baking dish; let rise again for about 30 minutes.
  5. 5. Preheat oven to 375°F; brush rolls with beaten egg and bake for 25–30 minutes until golden brown.
