  • 1.5 pounds boneless short ribs (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 1 pound Mexican chorizo
  • 1 large onion (chopped)
  • 2 jalapeno peppers (chopped)
  • 6 cloves garlic (chopped)
  • 3 15-ounce cans fire roasted tomatoes
  • 1 15-ounce can black beans (drained)
  • 1 15-ounce can red kidney beans (drained)
  • 1 cup beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chili powder blend
  • 1 teaspoon Mexican oregano
  • 1 teaspoon cumin
  • Hot sauce (to taste)
  • 2 tablespoons corn meal (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Season short ribs with salt and pepper, sear for 1-2 minutes per side until browned, then remove.
  2. In the same pot, sauté chopped onion and jalapeños for about 5 minutes until softened.
  3. Add garlic and chorizo; cook for another 5 minutes until chorizo is mostly cooked.
  4. Stir in chili powder, cumin, oregano; cook for 1 minute.
  5. Pour in beef stock and scrape up any browned bits from the pot.
  6. Return short ribs to the pot; add tomatoes and drained beans. Mix well.
  7. Bring to a boil, then reduce heat to low and simmer covered for about 2 hours until the meat is tender.
  8. If necessary, thicken with cornmeal during the last few minutes of cooking.
