  • 2 cups shredded zucchini (not squeezed)
  • 2 minced scallions
  • 2½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1¾ cup shredded aged cheddar cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F (220°C) and line a muffin pan.
  2. In a large heat-safe bowl, melt the butter with minced garlic in the microwave.
  3. Add eggs, milk, salt, and pepper to the melted butter; whisk until smooth.
  4. Stir in shredded zucchini and scallions.
  5. Gradually mix in flour and baking powder until just combined. Fold in the cheeses gently.
  6. Divide batter into muffin cups and bake for 5 minutes at 425°F. Then reduce heat to 350°F (177°C) and bake for an additional 20 minutes until golden brown.
