  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the egg yolk (or flax egg), vanilla extract, and corn syrup; mix until well combined.
  4. In another bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt. Gradually combine with the wet mixture until just mixed.
  5. Scoop dough into balls about one inch in diameter and roll in granulated sugar before placing on the baking sheet.
