Ingredients

Scale
  • 1 pound chicken sausage (mild or hot)
  • 5 tablespoons unsalted butter
  • 21/4 cups mirepoix (diced carrots, celery, onions)
  • 1 teaspoon minced garlic
  • 4 cups chopped baby gold potatoes
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups freshly shredded extra-sharp Cheddar cheese
  • 1/4 cup sour cream
  • Hearty buttered bread (for serving, optional)

Instructions

  1. In a large pot over medium-high heat, sear the chicken sausage until browned. Transfer to a plate.
  2. In the same pot, melt butter and sauté the mirepoix for about 5 minutes. Add garlic and cook for an additional 30 seconds.
  3. Stir in potatoes, seasonings, and chicken stock; bring to a boil. Reduce heat to low and simmer until potatoes are tender.
  4. In a separate pot, create a creamy mixture by whisking together melted butter, flour, milk, and heavy cream until smooth.
  5. Combine the creamy mixture into the soup base along with shredded cheese and cooked sausage.
  6. Adjust seasoning as needed and serve warm.
