  • 1/4 cup butter
  • 1 bag large vegan marshmallows (approximately 40)
  • 6 cups Rice Krispies
  • Red & yellow liquid food coloring
  • Mini chocolate candies for decoration (like Rolos and M&Ms)
  • Cooking oil or melted butter to prevent sticking

Instructions

  1. In a large pot over low heat, melt the butter until fully liquefied.
  2. Stir in the vegan marshmallows continuously until completely melted.
  3. Remove from heat, add yellow food coloring first, then red. Mix until you achieve your desired pumpkin color.
  4. Fold in the Rice Krispies until evenly coated with the mixture.
  5. Coat your hands with oil or melted butter and roll the mixture into small pumpkin balls, placing them on parchment paper.
  6. Press a Mini Rolo on top of each ball for a stem and place a green M&M as a leaf while still warm.
  7. Allow to cool completely before serving.
