  • 150g mini mozzarella balls
  • 1 black olive (sliced)
  • Cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 50g black olives (sliced)
  • Fresh basil leaves (chopped)
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and rinse under cold water.
  2. Create eyeballs by placing a slice of black olive on each mini mozzarella ball.
  3. In a large mixing bowl, combine cooked pasta, diced cucumber, bell peppers, cherry tomatoes, and olives.
