- 1 tablespoon pumpkin pie spice
- 1 tablespoon all-purpose flour (optional, for structure)

- Caramel sauce
- Chopped pecans
- Ground cinnamon or nutmeg
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press this mixture firmly into the bottom of a greased 9×13-inch baking pan to form an even layer.
- In another mixing bowl, beat together the softened cream cheese and granulated sugar using an electric mixer until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree, vanilla extract, pumpkin pie spice, and flour (if using) until fully combined.
- Pour the cheesecake filling over the prepared crust in the baking pan. Bake in your preheated oven for about 40 minutes or until the center is set but slightly jiggly.
- Remove from oven and allow to cool at room temperature before chilling in the refrigerator for at least 4 hours—or ideally overnight—for best results. Once chilled, cut into bars. Top with whipped cream, caramel sauce, chopped pecans, or a sprinkle of ground cinnamon or nutmeg as desired.
