  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon all-purpose flour (optional, for structure)
  • Whipped cream
  • Caramel sauce
  • Chopped pecans
  • Ground cinnamon or nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press this mixture firmly into the bottom of a greased 9×13-inch baking pan to form an even layer.
  3. In another mixing bowl, beat together the softened cream cheese and granulated sugar using an electric mixer until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree, vanilla extract, pumpkin pie spice, and flour (if using) until fully combined.
  4. Pour the cheesecake filling over the prepared crust in the baking pan. Bake in your preheated oven for about 40 minutes or until the center is set but slightly jiggly.
  5. Remove from oven and allow to cool at room temperature before chilling in the refrigerator for at least 4 hours—or ideally overnight—for best results. Once chilled, cut into bars. Top with whipped cream, caramel sauce, chopped pecans, or a sprinkle of ground cinnamon or nutmeg as desired.
