  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika (plus more for dusting)
  • optional: tiny dash of orange food coloring
  • 2 tablespoons fresh chives (finely chopped)

Instructions

  1. Place eggs in a saucepan, cover with cold water by an inch, and bring to a boil. Remove from heat and let sit covered for 10 minutes.
  2. Prepare an ice bath in a bowl with ice water. Transfer hot eggs into the ice bath for at least 5 minutes.
  3. Gently crack and peel each egg under cool running water.
  4. Slice peeled eggs in half lengthwise and scoop out yolks into a bowl.
  5. Mix yolks with mayonnaise, mustard, salt, pepper, paprika, and food coloring until smooth.
  6. Pipe the filling back into egg whites using a piping bag fitted with a star tip.
  7. Create pumpkin ridges with a knife or toothpick and insert chive pieces as stems.
  8. Dust with paprika and chill before serving.
