  • 15 whole rectangular graham crackers
  • 1/4 cup granulated sugar
  • 8 tablespoons unsalted butter (melted)
  • 11/4 cups pumpkin puree
  • 12/3 cup granulated sugar
  • Three 8-oz packages full-fat cream cheese (at room temperature)
  • 3 large eggs (at room temperature)
  • 1 tablespoon all-purpose flour
  • 11/2 teaspoons pumpkin pie spice
  • 1/2 cup full-fat sour cream

Instructions

  1. Preheat your oven to 350°F. Line a 9×13 baking pan with foil and lightly grease it.
  2. Crush graham crackers into fine crumbs and mix with sugar and melted butter. Press firmly into the bottom of the prepared pan.
  3. In a mixing bowl, beat cream cheese until smooth, then add sugar and mix until combined. Gradually incorporate pumpkin puree, vanilla extract, sour cream, salt, spices, flour, and eggs until smooth.
