  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 large egg
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 tbsp all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. For the crust, combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press firmly into the bottom of the prepared dish, bake for 8 minutes, then cool slightly.
  3. For the cheesecake layer, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time along with vanilla extract. Pour half of this mixture over the cooled crust.
  4. For the pumpkin layer, whisk together pumpkin puree, an egg, brown sugar, cinnamon, nutmeg, and flour. Fold this mixture into the remaining cheesecake batter until just combined. Pour over the cheesecake layer.
  5. Bake for 35–40 minutes until set but slightly wobbly in the center. Cool to room temperature and refrigerate for at least 4 hours or overnight before serving.
