- 2 sticks unsalted butter (softened)
- 1/2 cup brown sugar (for crust)

- 1 and 1/2 cups brown sugar (for filling)
- 3/4 cup light corn syrup
- 2 tablespoons melted butter (for filling)
- 1 teaspoon vanilla extract
- 2 and 1/2 cups chopped pecans
Instructions

- In a skillet, melt 2 tablespoons of butter over medium heat. Add chopped pecans and toast until golden brown (about 10 minutes).
- In an electric mixer bowl, beat softened butter and brown sugar until creamy. Mix in flour and salt until combined.
- Press dough into each mini muffin cup to create crusts.
- In another bowl, combine brown sugar, light corn syrup, melted butter, and vanilla; stir until smooth. Fold in toasted pecans.
- Spoon filling into each crust about three-quarters full; bake for approximately 15 minutes.
