  • 1/2 cup brown sugar (for crust)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 and 1/2 cups brown sugar (for filling)
  • 3/4 cup light corn syrup
  • 2 tablespoons melted butter (for filling)
  • 1 teaspoon vanilla extract
  • 2 and 1/2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F and lightly spray a mini muffin pan.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add chopped pecans and toast until golden brown (about 10 minutes).
  3. In an electric mixer bowl, beat softened butter and brown sugar until creamy. Mix in flour and salt until combined.
  4. Press dough into each mini muffin cup to create crusts.
  5. In another bowl, combine brown sugar, light corn syrup, melted butter, and vanilla; stir until smooth. Fold in toasted pecans.
  6. Spoon filling into each crust about three-quarters full; bake for approximately 15 minutes.
  7. Let cool slightly before adding more filling if desired, then allow bites to cool completely before removing from the pan.
