  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the peach filling by mixing cubed peaches with granulated sugar, lemon juice, cornstarch, and water in a bowl. Set aside.
  2. In a stand mixer, combine warm water, bread flour, sugar, yeast, and salt. Add whole milk, heavy cream, egg, tangzhong, and vanilla paste. Mix until smooth and let it rise until doubled (about 60 minutes).
  3. Roll out the dough into a rectangle and spread softened butter over it.
  4. Sprinkle with cinnamon sugar and distribute sliced peaches evenly on top.
  5. Roll tightly into a log shape, slice into 12 pieces, and place them in a greased baking dish.
  6. Prepare crumb topping by mixing softened butter, brown sugar, cinnamon, and flour until crumbly; sprinkle over rolls.
  7. Bake at 350°F (175°C) for about 30 minutes or until golden brown.
  8. Make cream cheese glaze by blending cream cheese with powdered sugar and heavy cream; drizzle over warm rolls before serving.
