  • 5 to 6 Tablespoons ice water
  • 4 medium apples, peeled and diced
  • 1/4 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons all-purpose flour
  • 1 large egg, whisked with 1 Tablespoon water
  • Sanding sugar (optional)

Instructions

  1. In a large mixing bowl, combine flour, rosemary, sugar, and salt.
  2. Add the cold, cubed butter. Use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together but is not sticky.
  4. Form the dough into a ball, wrap in plastic wrap, and refrigerate for about 30 minutes.
  5. In another bowl, combine diced apples, white sugar, brown sugar, cinnamon, and flour. Toss until apples are evenly coated.
  6. Preheat your oven to 375°F (190°C).
  7. On a floured surface, roll out the chilled dough to about 1/8-inch thickness.
  8. Cut out circles using a round cutter that fits into your muffin tin slots.
  9. Press each circle into the muffin tin, creating small cups.
  10. Fill each cup with apple filling, heaping slightly over the edges.
  11. Roll out remaining dough to create tops or use leftover scraps to make decorative shapes.
  12. Place on top of filled cups or create lattice patterns if desired.
  13. Brush tops with whisked egg mixture and sprinkle with sanding sugar if using.
  14. Bake in preheated oven for about 18 minutes or until golden brown.
