Ingredients

Scale
  • 1 cup unsalted butter
  • 1 ¼ cups light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • 1 cup white chocolate chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a medium saucepan over medium-low heat, melt the butter until it turns golden brown. Stir constantly until tiny brown specks appear; remove from heat.
  2. Mix the brown sugar and granulated sugar into the warm butter until smooth. Chill in the refrigerator for about 10 minutes.
  3. Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper.
  4. Stir in eggs and vanilla extract into the butter mixture until fully incorporated.
  5. Combine flour, oats, baking soda, salt, and cinnamon into the wet mixture; mix well.
  6. Gently fold in both kinds of chocolate chips until evenly distributed.
  7. Scoop dough onto prepared baking sheets, leaving space between cookies.
  8. Bake for 11–13 minutes or until edges turn golden; let cool on baking sheets for a few minutes before transferring to wire racks.
