- 1/4 cup brown sugar

- 1 tsp vanilla extract
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1/4 cup pure maple syrup
- 1 cup powdered sugar
- 2 tbsp pure maple syrup (for glaze)
- 1–2 tbsp milk or plant-based milk (for glaze)
- 1/2 tsp vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, spices, and salt; set aside.
- Cream together softened butter with granulated and brown sugars until light and fluffy.
- Mix in the egg and vanilla extract followed by pumpkin puree and maple syrup until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop tablespoons of dough onto prepared sheets, spacing them apart.
- Bake for 12–15 minutes until edges are set but centers are slightly puffed.
- Cool on the sheet for a few minutes before transferring to a wire rack.
- Prepare glaze by whisking powdered sugar with maple syrup and milk until smooth; drizzle over cooled cookies.
