  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup pure maple syrup
  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup (for glaze)
  • 12 tbsp milk or plant-based milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt; set aside.
  3. Cream together softened butter with granulated and brown sugars until light and fluffy.
  4. Mix in the egg and vanilla extract followed by pumpkin puree and maple syrup until smooth.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Scoop tablespoons of dough onto prepared sheets, spacing them apart.
  7. Bake for 12–15 minutes until edges are set but centers are slightly puffed.
  8. Cool on the sheet for a few minutes before transferring to a wire rack.
  9. Prepare glaze by whisking powdered sugar with maple syrup and milk until smooth; drizzle over cooled cookies.
