  • 1 cup panko breadcrumbs

  • 2 tablespoons chopped fresh parsley (divided)
  • 4 tablespoons olive oil, divided
  • 1 1/2 teaspoon coarse salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1/4 cup chopped fresh basil
  • 1 teaspoon garlic powder
  • 1/2 cup marinara, warmed, for dipping
  • Lemon wedges, for garnish

Instructions

  1. Preheat the oven to 425°F. Line two baking sheets with parchment paper and drizzle with olive oil.
  2. Set up three shallow dishes: mix flour with salt and pepper in the first, beaten eggs in the second, and combine panko breadcrumbs, Parmesan, reserved lemon zest, parsley, and spices in the third.
