Ingredients
- 1 pound ground beef (80 lean / 20 fat)
- 1 pound ground lamb (or additional beef)
- ½ bunch parsley
- 4 garlic cloves
- ½ yellow onion
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon 7 spices mix
- ½ tablespoon coriander powder
- 1 tablespoon sumac
- ½ tablespoon aleppo pepper
- ¼ tablespoon black pepper
- 2–3 teaspoons salt (or to taste)
- ½ teaspoon baking soda
Instructions
- In a food processor, finely chop parsley and garlic; add to a mixing bowl with ground meats.
- Peel and chop the onion; squeeze out excess moisture using a paper towel.
- Combine onion and all spices into the meat mixture; mix well without overworking.
- Chill the mixture in the fridge for at least 45 minutes.
- Shape the mixture onto soaked wooden or metal skewers.
- Preheat your grill on medium-low heat and cook kebabs for 10-15 minutes until cooked through.
