  • 10 tbsp salted butter
  • 4 oz vegan marshmallow crème
  • ¾ cup sweetened condensed milk
  • ½ cup granulated sugar
  • ¼ cup caramel syrup
  • 1 bag butterscotch chips (11 oz)
  • ½ cup granulated sugar (for white chocolate layer)
  • 1 stick salted butter (for white chocolate layer)
  • 3 oz vegan marshmallow crème (for white chocolate layer)
  • ¼ cup sweetened condensed milk (for white chocolate layer)
  • 1 cup white chocolate chips

Instructions

  1. Line an 8×8 inch baking dish with parchment paper and spray with cooking spray.
  2. In a saucepan over medium-high heat, combine butter, vegan marshmallow crème, sweetened condensed milk, sugar, and caramel syrup. Stir until boiling and cook for 4 minutes until golden-brown.
  3. Mix in butterscotch chips until smooth. Pour into the prepared dish and chill in the freezer.
  4. For the white chocolate layer, combine sugar, butter, vegan marshmallow crème, and sweetened condensed milk in another saucepan. Stir until boiling; cook for 2 minutes.
  5. Remove from heat and add white chocolate chips until melted. Pour over the chilled butterscotch layer.
  6. Chill in the refrigerator for 2-3 hours until set, then cut into squares.
