Ingredients
- 2 tbsp unsalted butter
- ½ lb raw bacon (diced)
- ½ cup chopped yellow onion
- 2 garlic cloves (pressed)
- 3 lbs cubed golden potatoes
- 2 cups vegetable stock
- Salt and cracked black pepper
- ½ cup heavy whipping cream
- 2–3 tbsp sour cream
- Chopped green onion (for garnish)
- Dill weed (for garnish)
- Cheddar cheese (for garnish)
Instructions
- Prepare all ingredients: dice bacon and onion; peel and cube potatoes.
- In a Dutch oven over medium heat, melt butter and cook bacon until halfway done; add onion and sauté until both are cooked through.
- Stir in pressed garlic until fragrant.
- Add cubed potatoes and cook for about 5 minutes.
- Pour in vegetable stock to cover potatoes; bring to simmer on medium-high heat then reduce to medium-low.
- Season with salt, pepper, garlic powder, and bay leaf; cover pot until potatoes are tender.
- Remove lid and stir in dill weed, green onion, sour cream, cheddar cheese, and heavy cream; heat through before serving.
