  • 12g grated garlic
  • 960ml chicken or veggie broth
  • 960ml water
  • 28g dried shiitake mushrooms
  • 2 instant ramen noodle packs (no seasoning)
  • 60g chopped scallions or chives
  • 120g chopped kale (or spinach)
  • 130g shredded carrots
  • Sriracha or chili oil to taste
  • Crunchy golden panko

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add grated garlic and ginger; sauté for 2–3 minutes until fragrant.
  2. Pour in chicken or veggie broth and water; add dried shiitake mushrooms. Simmer for about 10 minutes.
  3. Add instant ramen noodles and cook for 4–5 minutes until al dente.
  4. Stir in kale, carrots, and scallions; remove from heat to let them soften in the broth.
  5. Serve topped with toasted panko and drizzle with Sriracha or chili oil.
