  • 1/2 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 16 tablespoons unsalted butter (melted)
  • 1/3 cup toasted pecans (roughly chopped)
  • 12 ounces cranberries (fresh or frozen)
  • 1 cup granulated sugar (for filling)
  • 4 teaspoons tapioca flour
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice
  • 2 teaspoons vanilla bean paste

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a 9×9-inch square pan lined with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, kosher salt, granulated sugar, and brown sugar. Mix well.
  3. Stir in melted butter until crumbly; reserve one-third for topping.
  4. Press the remaining mixture into the bottom of the prepared pan to form the crust.
  5. In another bowl, mix cranberries with granulated sugar, tapioca flour, orange zest, orange juice, and vanilla until coated.
  6. Spread the cranberry mixture over the crust and sprinkle reserved crumble on top.
  7. Bake for about 60 minutes or until golden brown; cool completely before slicing.
