  • 2 pounds Russet or Yukon gold potatoes
  • 1/4 cup unsalted butter (divided)
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 large egg yolks
  • Salt and black pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Peel and chop the potatoes, then place them in a large pot with cold water and a pinch of salt. Bring to a boil and cook until fork-tender (15-20 minutes).
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Drain the potatoes well, then return to low heat for moisture evaporation. Mash until smooth.
  4. Mix in 2 tablespoons melted butter, warm cream, Parmesan cheese, salt, pepper, and egg yolks until fully combined.
  5. Transfer the mixture into a piping bag fitted with a star tip and pipe mounds onto the prepared baking sheet.
  6. Brush the mounds with remaining melted butter and bake for 15-20 minutes until golden brown on edges.
