- 2 pounds Russet or Yukon gold potatoes
- 1/4 cup unsalted butter (divided)
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 3 large egg yolks
- Salt and black pepper to taste

Instructions
- Peel and chop the potatoes, then place them in a large pot with cold water and a pinch of salt. Bring to a boil and cook until fork-tender (15-20 minutes).
