  • 2 cups cooked and shredded chicken
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Sour cream for serving

Instructions

  1. Prepare your chicken by boiling or baking it until fully cooked, then shred it.
  2. In a skillet over medium heat, add vegetable oil and sauté chopped onion and minced garlic until soft.
  3. Stir in the shredded chicken along with cumin, chili powder, salt, and pepper; mix well and cook for an additional 3-5 minutes.
  4. Pour a little enchilada sauce into a baking dish to prevent sticking.
  5. Fill each tortilla with the chicken mixture and sprinkle with cheese; roll tightly and place seam-side down in the dish.
  6. Pour remaining sauce over the enchiladas and top with extra cheese. Cover with foil.
  7. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes; remove foil and bake an additional 5-10 minutes until cheese is bubbly.
  8. Allow to rest before garnishing with cilantro and serving with sour cream.
