  • 1 cup coconut flour
  • 1/8 cup coconut oil (melted)
  • 3 1/2 cups dark chocolate chips
  • Flaked sea salt (for topping)

Instructions

  1. In a mixing bowl, combine canned pumpkin, maple syrup, vanilla extract, pumpkin pie spice, salt, cinnamon, pure cane sugar, and melted coconut oil until fully mixed.
  2. Gradually add coconut flour and mix until thick but not sticky.
  3. Use a mini ice cream scoop to form small balls and place them on a wax paper-lined baking sheet.
  4. Freeze the truffles for about 20 minutes to firm up.
  5. Melt dark chocolate chips in a microwave-safe bowl in short intervals (20-30 seconds) while stirring frequently.
  6. Dip each frozen truffle into the melted chocolate using a fork and sprinkle flaked sea salt on top before setting.
  7. Return the coated truffles to the freezer until solid.
