  • 1 1/2 sticks (170g) Unsalted Butter
  • 3 double shots (6 oz) Espresso
  • 1/2 C (40g) Cocoa Powder
  • 1 (3.5 oz) Ghirardelli 72% Cacao Dark Chocolate Bar, chopped
  • 1 1/4 C (240g) Light Brown Sugar
  • 3 Large Eggs + 2 Egg Yolks
  • 1 C (120g) All-Purpose Flour
  • 4 C (450g) Powdered Sugar

Instructions

  1. Preheat the oven to 350ºF and grease a 9×13 baking dish.
  2. Melt unsalted butter and espresso in a saucepan over low-medium heat.
  3. Stir in cocoa powder and chopped chocolate until fully melted.
  4. In a large bowl, mix dark brown sugar, kosher salt, and bourbon vanilla extract.
  5. Combine melted chocolate mixture with dry ingredients; whisk until smooth.
  6. Add eggs and yolks; whisk until glossy.
  7. Fold in flour and baking soda until just combined.
  8. Pour batter into the prepared dish and bake for 22-25 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting with brown butter buttercream.
