  • 1/4 tsp ginger
  • pinch cloves
  • 1/4 tsp salt
  • 4 oz softened cream cheese
  • 3 tbsp softened butter
  • 1 tsp vanilla extract
  • 3/4 cup powdered sugar
  • Pecans (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until smooth. Stir in shredded carrots.
  3. Add vanilla extract, egg yolk, and heavy cream; mix until combined.
  4. In another bowl, whisk together flour and spices. Gradually add to the wet mixture until fully incorporated.
  5. Scoop tablespoon-sized dough portions onto a parchment-lined baking sheet and bake for about 12 minutes or until lightly golden.
  6. For frosting, beat together cream cheese and butter until creamy; mix in vanilla and powdered sugar until smooth.
  7. Frost cooled cookies generously with cream cheese frosting.
