Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 bananas)
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups white chocolate chips
  • 1 1/2 cups heavy cream, whipped to soft peaks
  • 1/4 cup powdered sugar
  • 1 package (3.4 oz) instant banana pudding mix
  • Fresh banana slices, to taste (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter with granulated and brown sugars until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and mashed bananas until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Fold in the white chocolate chips using a spatula.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie. Bake for about 12-14 minutes or until lightly golden around the edges.
  6. While the cookies cool, whip heavy cream with powdered sugar until soft peaks form, then gently fold in instant banana pudding mix.
  7. Once cooled, top each cookie generously with whipped topping and garnish with fresh banana slices if desired.
