- 4 ounces goat cheese (room temperature)
- 2 tablespoons milk (I used 1%)
- 1 teaspoon finely chopped fresh rosemary
- Kosher salt and fresh ground black pepper to taste
- 1/4 cup toasted chopped pecans
- 1/2 cup dried cranberries
- Honey for drizzling
Instructions
- Preheat the oven to 425°F and prepare a baking sheet with cooking oil.
- Toss sweet potato slices in olive oil, salt, and pepper until coated. Arrange them in a single layer on the baking sheet.
- Bake for 10 minutes, flip slices, then bake for an additional 8-12 minutes until tender.
- While baking, whip together goat cheese, milk, rosemary, salt, and pepper until smooth.
