  • 4 ounces goat cheese (room temperature)
  • 2 tablespoons milk (I used 1%)
  • 1 teaspoon finely chopped fresh rosemary
  • Kosher salt and fresh ground black pepper to taste
  • 1/4 cup toasted chopped pecans
  • 1/2 cup dried cranberries
  • Honey for drizzling

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with cooking oil.
  2. Toss sweet potato slices in olive oil, salt, and pepper until coated. Arrange them in a single layer on the baking sheet.
  3. Bake for 10 minutes, flip slices, then bake for an additional 8-12 minutes until tender.
  4. While baking, whip together goat cheese, milk, rosemary, salt, and pepper until smooth.
  5. Once sweet potatoes are ready, top each round with goat cheese mixture, chopped pecans, and cranberries. Drizzle with honey before serving warm or at room temperature.
