Ingredients
- 1 1/2 pounds boneless steak (ribeye or sirloin)

- kosher salt (to taste)

- 3 sweet onions (thinly sliced)
- 9 slider buns
- 3/4 pound havarti cheese (sliced)
- 1 stick unsalted butter (room temperature)
- 4 garlic cloves (minced)
- 1/2 lemon (zested and juiced)
- 1 tablespoon dijon mustard
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 1/2 teaspoon dried thyme
- 1 teaspoon red pepper flakes
- 1 tablespoon chives (minced)
- 2 tablespoons fresh parsley (minced)

Instructions
- Prepare the steaks by trimming excess fat and seasoning generously with oil, salt, and pepper. Refrigerate wrapped for a few hours.
- Caramelize the onions in a skillet with oil over medium heat until golden brown (15-20 minutes).
- Grill the steaks over high heat for about 4–5 minutes per side until desired doneness; let rest before slicing.
- Assemble sliders by layering sliced steak, caramelized onions, havarti cheese, and smothering with cowboy butter made from mixing the butter with garlic, lemon zest & juice, dijon mustard, paprika, cayenne, thyme, red pepper flakes, chives, parsley, salt, and pepper.
