  • 350 g Water
  • 50 g Sourdough Starter
  • 10 g Salt
  • 50 g Brown Sugar
  • 5 g Cinnamon

Instructions

  1. Begin by mixing the sourdough starter and water in a bowl. Add flour and salt to create a shaggy dough. Let it rest for an hour.
  2. After the autolyse process, form the dough into a ball with gentle stretches. Allow to rest for 30 minutes.
  3. Perform several sets of stretch and folds over the next few hours to build structure.
  4. Allow the dough to bulk ferment until puffy.
  5. Prepare a cinnamon sugar mixture while the dough ferments.
  6. Shape the dough into a rectangle, sprinkle with cinnamon sugar, roll tightly, and place in a well-floured banneton.
  7. Cold ferment in the refrigerator for at least 5 hours or up to 36 hours before baking.
  8. Preheat your oven, transfer the dough onto baking paper, score the top, and bake in a Dutch oven.
