- 4 overly ripe bananas (about 1 1/4 cup mashed)
- 1/4 cup granulated sugar
- 1/4 cup dark brown sugar
- 1/4 cup melted salted butter
- 2 eggs (room temperature)
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 3 teaspoons cinnamon (divided)
- 1 tablespoon pure maple syrup
- Salt
Instructions
- Preheat oven to 350°F and grease a 9×5 inch bread pan.
- In a small bowl, combine granulated sugar and 2 teaspoons of cinnamon.
- In a large bowl, mix mashed bananas, melted butter, maple syrup, eggs, and vanilla until well combined.
- Add flour, baking soda, salt to the banana mixture; stir gently until just combined.
- In another small bowl, mix dark brown sugar, 1 tablespoon of flour, remaining cinnamon, and melted butter for the crunch topping.
- Pour half the batter into the prepared pan; sprinkle with half the cinnamon sugar mixture and half the crunch mix. Add remaining batter and top with remaining crunch mixture.
- Bake for about 50–60 minutes or until a toothpick comes out clean. Cool for at least 30 minutes before slicing.
