- 3 cups diced Granny Smith apples
- 1 ¾ cups all-purpose flour
- ¾ cup brown sugar
- ¾ cup plain yogurt
- 2 large eggs
- ½ cup canola oil
- 1 tsp vanilla extract
- 1 ½ tbsp demerara sugar
- ¼ tsp cinnamon powder
- 1 tsp cinnamon powder
- ½ tsp ginger powder
- ¼ tsp allspice
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp cooking salt
- 1 cup walnuts, toasted, roughly chopped
Instructions
- Preheat your oven to 200°C (390°F). Prepare a loaf pan by greasing it and lining with baking paper.
- In a small bowl, combine demerara sugar and cinnamon for the topping.
- Toss sliced apples with sugar and cinnamon mixture; set aside.
- In one bowl, whisk together dry ingredients (flour, baking powder, baking soda, salt).
- In another bowl, mix wet ingredients (yogurt, eggs, oil, vanilla) until smooth.
- Combine wet and dry ingredients without overmixing; fold in diced apples and walnuts.
- Transfer batter to the loaf pan and top with apple slices and cinnamon sugar.
- Bake for 60 minutes; cover loosely with foil and bake an additional 25 minutes until done.
- Allow to cool before slicing.
