  • 2 packages (6 oz each) ramen noodles
  • 1 lb boneless skinless chicken thighs
  • 1 red bell pepper
  • 1 cup snap peas
  • 1 carrot
  • 3 cloves garlic
  • 1 tbsp ginger
  • Green onions (for garnish)
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper

Instructions

  1. Boil water in a pot and cook ramen noodles for about 2 minutes; drain and set aside.
  2. Mix soy sauce, oyster sauce, sesame oil, sugar, and white pepper in a bowl.
  3. Heat vegetable oil in a large skillet or wok; stir-fry chicken until golden brown (5–6 minutes), then remove from pan.
  4. Add remaining oil; stir-fry bell pepper, snap peas, and carrot for 2–3 minutes.
  5. Add garlic, ginger, and white parts of green onions; stir for another 30 seconds.
  6. Combine chicken back into the pan with vegetables; toss with cooked noodles and sauce for another 2–3 minutes.
  7. Serve hot garnished with green onion tops.
