  • ¾ pound rigatoni pasta
  • 32 oz. marinara sauce
  • 3 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 small boneless skinless chicken breasts
  • ¾ cup flour
  • 2 eggs
  • 1½ cups Italian breadcrumbs

Instructions

  1. Cook rigatoni in salted water until al dente; drain.
  2. Set up a breading station: flour mixed with seasoned salt and pepper, beaten eggs, and Italian breadcrumbs.
  3. Bread the chicken by dipping it in flour, then eggs, followed by breadcrumbs.
  4. Fry the breaded chicken until golden brown; slice into strips.
  5. In a baking dish, layer half of the cooked pasta, half of the marinara sauce, half of both cheeses, and sliced chicken. Repeat layers.
