  • 1 1/2 cups Biscoff® cookies (crushed)
  • 1/8 cup sugar
  • 1/3 cup butter (melted)
  • 8 oz cream cheese
  • 1 egg
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1 1/3 cups canned pumpkin
  • 1 cup evaporated milk
  • 2 eggs
  • 1/4 cup brown sugar (packed)
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup pecans (coarsely chopped)
  • 1/2 cup sugar
  • 2 Tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray an 8 x 8 baking dish.
  2. In a mixing bowl, combine crushed Biscoff® cookies, sugar, and melted butter until well mixed. Press this mixture evenly into the bottom of your prepared baking dish. Bake for about 10 minutes until set.
  3. In another bowl, beat together cream cheese, egg, sugar, and vanilla using an electric mixer until smooth. Pour this mixture over the baked crust, spreading evenly.
  4. In a separate bowl, whisk together canned pumpkin, evaporated milk, eggs, brown sugar, sugar, cinnamon, nutmeg, and salt until fully combined. Carefully pour this mixture over the cheesecake layer.
  5. Bake in the preheated oven for about 40-45 minutes or until set. The edges should look firm while the center may still have a slight jiggle.
  6. While baking, melt butter in a small saucepan over medium heat. Stir in chopped pecans and sugar until they become caramelized but be careful not to burn them.
  7. Once baked and slightly cooled, sprinkle the candied pecans on top of your cheesecake pumpkin bars. Allow them to cool completely before cutting into squares for serving.
