Ingredients

Scale
  • ½ cup unsalted butter
  • 1 cup whole milk, warmed
  • 2 ¼ teaspoons active dry yeast
  • ¾ cup pumpkin puree
  • 4 ¾5 cups all-purpose flour
  • 1 cup packed dark brown sugar
  • 8 ounces cream cheese

Instructions

  1. Prepare brown butter by melting unsalted butter in a saucepan until golden brown and fragrant. Let cool.
  2. Activate yeast by mixing warm milk with sugar and sprinkling yeast on top. Allow it to foam for about 10-15 minutes.
  3. In a large bowl, combine activated yeast mixture with remaining sugar, eggs, cooled brown butter, pumpkin puree, flour (4¾ cups), and salt. Mix until combined.
  4. Knead the dough until smooth and elastic using a stand mixer or by hand.
  5. Let the dough rise in a greased bowl until doubled in size (about one hour).
  6. Prepare filling by mixing dark brown sugar, remaining pumpkin puree, cinnamon, and pumpkin pie spice.
  7. Roll out dough and spread softened butter followed by filling mixture before rolling tightly.
  8. Cut into rolls and place in a lined baking pan; allow to rise again while preheating oven to 350°F.
  9. Bake for about 30 minutes until golden brown.
  10. For icing: Beat cream cheese with softened butter; mix in powdered sugar and vanilla essence until smooth.
