  • 1 can (15 oz) pure pumpkin
  • 1/4 cup sour cream
  • 1/4 cup apple cider or vinegar (bourbon substitute)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup maple syrup
  • 1 cup heavy cream
  • 3 tablespoons granulated sugar for topping

Instructions

  1. To prepare the crust, mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Stir in beaten egg, vinegar, and ice water to form a dough. Chill for at least 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out the dough and fit it into a pie dish; bake for 20–25 minutes until golden brown and cool.
  3. For the filling, whisk together eggs and pumpkin purée with sour cream, spices, and maple syrup until smooth. Pour into the cooled crust and bake for 50–60 minutes until set but slightly jiggly.
  4. Allow pie to cool completely. Just before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
