  • 4 pounds beef chuck roast
  • 10 guajillo chiles
  • 5 ancho chilies
  • 2 Roma tomatoes
  • 6 garlic cloves
  • Corn tortillas
  • Oaxacan cheese
  • Diced onion and cilantro for garnish

Instructions

  1. Prepare the chiles by removing stems and seeds, then toast them lightly in a skillet.
  2. Blend toasted chiles with tomatoes, onion, garlic, beef broth, vinegar, and spices until smooth.
  3. Place the beef in a slow cooker or Dutch oven and pour the blended sauce over it. Cook on low for 8 hours or high for 4 hours (or simmer for about 4 hours in a Dutch oven).
