  • 2 radishes
  • ½ cup hot water
  • ¾ cup rice vinegar
  • ½ cup mayonnaise
  • Sriracha (to taste)
  • Cooked rice (2 cups)

Instructions

  1. Marinate the pork: Combine soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, black pepper, and olive oil in a mixing bowl. Add sliced pork and marinate for at least 15 minutes.
  2. Pickle veggies: In another bowl, mix shredded carrots and radishes with hot water, rice vinegar, sugar, and salt. Let sit while cooking.
  3. Cook pork: Heat a skillet over medium-high heat and cook the marinated pork for about 8-10 minutes until caramelized.
  4. Make spicy mayo: Mix mayonnaise with sriracha and soy sauce; adjust spice as desired.
