- 3/4 tsp baking powder
- 3/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp allspice
- 6 oz cream cheese (cold)
- 2 1/4 cups powdered sugar (sifted)
- 1/4 tsp vanilla
Instructions
- Begin by reducing the apple cider in a saucepan over medium heat until it thickens to about 1/2 cup. Allow it to cool.
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, cream the softened butter with both sugars until light and fluffy. Add in the egg, vanilla, buttermilk, and cooled apple cider reduction; mix until combined.
- In another bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and allspice.
- Gradually add dry ingredients to wet mixture, stirring until just combined.
- Fill cupcake liners two-thirds full and bake for about 18 minutes or until a toothpick inserted comes out clean.
- Cool cupcakes on a rack before frosting with cream cheese frosting.
